www.vibrantvegan.com Here’s a delicious, low-calorie, extremely high-nutrient recipe we’re almost certain you’ll love! Raw Spaghetti 3-4 zucchini, sliced thinly lengthwise, “spiralized,” or grated 2-3 tomatoes, chopped 1 head of cauliflower, finely (and I mean “finely”) chopped 1/4 cup nutritional yeast 1 heaping tablespoon Italian seasonings 1 teaspoon salt 2 tablespoon balsamic vinegar or 1 tablespoon fresh lemon juice (optional) Place the zucchini and tomatoes in a medium-large salad bowl. Put all of the other ingredients into a smaller bowl and stir until it’s all mixed nicely together. Pour the “smaller bowl” mixture into the zucchini and tomatoes, then toss/stir gently. Eat at room temperature, or refrigerate for a few hours (or for however long you want). This should be eaten within a day of your making it. Yummy! Yummy! Be Vegan, Be Vibrant!

PLEASE help me find some fat-free low protein recipes for my dad? 5

My dad has to adjust his diet a lot due to a bout of acute pancreatitis and he’s having a hard time. What can I make him that’s fat free or very low in fat, and has almost no protein? He’s never had to diet before because of his metabolism and me and my mom haven’t either so we really don’t know anything about nutrition. He loves (well loved) chocolate and practically lived off of meat. But now he’s pretty much vegan against his will and will probably have to follow this diet forever. He’s tired of it already and since he’s otherwise super-healthy and fit (a full time martial arts master) this won’t shorten his life as long as he follows the rules so he has a loooooooooooong time to go. Dessert recipes are especially appreciated. Maybe a fruit pie or cookies or cakes with applesauce instead of oil would work?
