<p><em>Prep. time: 20 minutes + 1 hour<br />
Cooking time: 25 minutes<br />
Servings: 10<br />
Fat per serving: 0.5 grams</em></p>
<p><strong>2 <em>very </em>ripe bananas, mashed<br />
1 C (150 g/5 oz) wholemeal flour<br />
2 tsp. baking powder<br />
1/2 tsp ground cinnamon<br />
pinch of ground nutmeg<br />
1 C (250 ml/8 fl. oz.) skim milk<br />
1 tsp. maple syrup<br />
maple syrup and banana for serving</strong></p>
<p>1.  Put the mashed banana in a large bowl.  Sift the flour, baking powder, cinnamon and nutmeg onto the banana and return husks to he bowl.  Stir until the flour is moistened but not totally combined with the mashed banana.<br />
2.  Make a well in  the center, add the milk and syrup and stir constantly until smooth.  Set aside for 1 hour.<br />
3.  heat a large non-stick pan over medium heat and coat with cooking oil spray. Cook the pancakes in batches using 1/4 cup of batter for each pancake.  Cook for 3/4 minutes or until small bubbles appear on the surface.  Using a spatula, gently turn the pancakes over, loosening the edges first so they don&#8217;t stick to the pan.  Cook for another 3 minutes.  Remove from the pan and keep warm. Spray the pan again with a little cooking spray before each batch.<br />
4.  Serve drizzled with maple syrup and a few slices of banana.</p>
